I've always been sort of addicted to Veronica Mars (such a shame it got cancelled after Season 3, but YAY for the movie!). Every time I watched it, somehow I ended up hearing about something called Snickerdodles. Apparently that was the name of those amazingly tasty cookies that Veronica secretly bakes for Wallace's spirit boxes. After some research, I decided I wanted to try them. Found several recipes, and put myself to work.

Today, I had some free time (I get bored easily if i'm not doing anything) so I decided it was time to share.

They won't last very long! These were gone within 20 minutes!
 What you will need for about 4 -5 dozen cookies:

From what you can see, there is a lot of sugar in this cookies, but they also last for up to 14 days in sealed containers, so they are perfect as a gift. And these wonderful cinnamon  cookies are so simple to make too.
First, you have to whisk together the flour, salt and baking powder in a large bowl.
Either with an electric mixer, or a hand mixer, beat the butter and sugar until smooth. That should take about 2 to 3 minutes with an electric mixer, a bit longer manually. One at a time, beat the eggs into the mix. Then add the vanilla extract. Lastly, add in the flour mix and beat until you get a smooth dough (if it's soft, cover and refrigerate for about 1 or 2 hours or until firm).
Prepare the oven by preheating it to 190ÂșC and place the rack you'll be using in the center of the oven. Prepare two baking sheets with baking paper. In a small bowl mix the coating ingredients (cinnamon and sugar). Shape the dough into balls of about 2.5cm and roll them in the coating mix. Then place them evenly in the sheets and with the bottom of a glass, flatten them gently. Bake for about 8 to 10 minutes (or until golden). Leave them out too cool down for a little while and enjoy or leave for later :)

I have tried this recipe also adding a bit of strawberry jam on top before putting in the oven (without cinnamon and sugar coating) and it's delicious too. So, your imagination is the limit!
