Hello again everyone, I apologize for disappearing without a warning. Life's been interesting lately, getting used to actually having a lot to do turned out to be a bit harder than I thought, but loving it!
Anyhow, I thought I should come back to the blogesphere, and more importantly to you all, with a nice simple healthy breakfast recipe, perfect for brunch: Eggs on toast with a twist! As you possibly gathered so far, brunch may possibly be one of my top 3 meals, so versatile and flexible and allows for all sorts of creativity, you can make sweet dishes, or savory or a mix...just the perfect combination to start the new week refreshed and energized!!
All you will need to prepare these delicious toasts are:
- A couple medium eggs
- A tomato
- A pinch of black pepper
- A pinch of thyme
- A pinch of cinnamon (yes, you read it right, cinnamon!!)
- And a piece of your favourite bread bun (for this one i chose a wholegrain sesame, poppy seed and sunflower seed bun, but in Germany there are so many to chose from it's amazing! Another time I'll make a post about German bread ^^)
Once you have all the ingredients, it's as simple as mixing the eggs and the spices on a bowl and scrambling them. Washing and slicing the tomato. Cutting the bread into two pieces (and buttering it a little bit), placing the tomato slices and the egg on top. You can put some grated cheese and/or crispy bacon on top, but it's good without as well.
