Summer is here (sort of).
It's time for BBQs, evenings in the lake, bike trips, adventures... and for that, we need some energy. Yes, you're totally right! Food is a big part of any summer outdoors activity.
It has to be something easy to pack and bring along. Light enough it doesn't bother you or take a lot of space in your goodies bag.
Here I present to you the amazing
bruschetta tomato slices as promised on
Instagram, for which you'll need:
- 2 big tomatoes (sliced)
- Fresh basil chopped to taste
- 2 minced garlic cloves
- 1 ball of mozzarella squared to taste
- Olive oil, salt & pepper
And the preparation is fairly simple. Pre-heat the oven (broiler part) While you slice the tomatoes and prepare them in an oven tray. Right before introducing them in the oven drizzle with a bit of olive oil, salt and pepper, sprinkle the chopped basil and garlic and broil for about 5 minutes. Check them out, place the cheese over the broiled tomatoes and broil again for 5 minutes (or alternatively until the cheese is melted and golden). Let them cool down, pack and ready to go.
If you want to enjoy it at home, you can lay them on a bed of lettuce or fresh spinach leaves and dress with tzatziki or balsamico...it all comes down to you in the end. Enjoy!
Tip: If you feel like adding a bit extra taste you can add finely chopped bacon or ham to the cheese.
