A few weeks ago, i posted on Instagram the amazing Strawberry Cheesecake I was making.
Then I promised I'd share the secret with you.
Here it is! but bitesize so you can take them with you to work, or school, anywhere you'd like.
As it is no-bake you can prepare it directly on an individual desert size food container. I got my set from Ikea for 4€ and they work wonders! You can find them here (US), here (DE), or simply search PRUTA on any other country's Ikea website.
So for about 8 (9x9x4) portions you'll need the following (if you want to do a one piece bigger one the quantities should be divided by 0.3: i.e 75gr of biscuits / 0.3 = 250 gr).
For the biscuit base:
- 75 gr of butter biscuits (I used wholegrain because I love the taste but normal are also fine)
- 30 gr of melted butter
For the cheese filling:
- Vanilla extract
- 180 gr soft cheese
- 30 gr icing sugar
- 86 ml double cream
For the topping:
- 120 gr strawberries
- aprox. 8 gr icing sugar
I find that the process of preparation of this cheesecake is one of the funniest and most stress relieving I've ever tried.
You start by placing the biscuits in a bag and smashing (or using a rolling pin) them until broken down, then you mix them well with the melted butter, and press into the bottom of the little containers and let them rest in the fridge for about an hour before going to the next step.

Get the soft cheese, the vanilla extract (to taste), the icing sugar in a bowl and mix well until it takes a creamy texture, then add the double cream and mix again for a couple minutes.
With a spoon start putting the filling into the containers, when ready, flatten them out well and leave them in the fridge overnight to set.
--- Right before eating/ taking away with you ---
Prepare the topping by pureeing half of the 120 grams of fruit with a blender (place them in a bowl and mix them with a spoon of water and the remaining icing sugar) and using the rest to decorate the cakes. Pack a spoon and enjoy during your coffee or lunch break, or as a snack during the day (tho make sure to keep it in a cool place until you eat it)
