The Ensalada Campera has to be one of the most versatile salads in the Spanish cuisine.
It has a set base of ingredients to which one can add or subtract to one's desire. You don't like tuna? away with the tuna. You want a bit more fiber? Add a bit of brown rice.
Awesome, isn't it?
And on top of it all, it's perfect for lunches on the go, and lasts reasonably long in a sealed container.
So, what do we need for a medium size salad to share (about 4 people)?
- 1/2 green pepper
- 1/2 red pepper
- a big onion
- 2 cans of tuna
- 2 big potatoes (boiled and skinned)
- 2 hard-boiled eggs
- Olive Oil Extra Virgin
- Wine Vinegar (Sherry Vinegar)
- Salz
- Optional: Olives, capers, etc (you can put your imagination to use ^^)
Proces: Fairly simple.
Chop all the ingredients to taste, mix in a bowl, season with the olive oil, vinegar, and salt.
Cool, pack, and ready to go!
Healthy, easy, and extremely tasty. Perfect to take to work, the beach, a picnic, or simply to eat at home if you fancy ^^
