I know I've been horrible with the recipes lately, so to make it up today's recipe will be extra delicious!
On Sunday was the first day of Advent over here so we decided we'd make a special dinner.
T. had a couple trout he wanted to make so this time I was only the assistant, either way, it was so delicious I have to share it with you.
This recipe is extremely simple, yet so sophisticated that can be prepared for nice dinner party, or a special occasion, but you won't have to spend hours in the kitchen preparing it.
For a portion for two you'll need:
- two full trouts
- one sliced lemon
- fresh herbs (we used parsley, oregano, thyme, sage, rosemary, and laurel)
- salt and pepper
- 100 gr couscous
- 1/2 zucchini
First you'll wash thoroughly the fish with cold water, and will dry it off.
In a grill ceramic plate add the salt and pepper all over both trout (in and out), and fill the fish nicely with the lemon and herbs. Lay it back on the tray, place it in the preheated oven, and let it roast for about 30 minutes at 200ºC (400ºF/ gas mark 6).
In the meantime place 100 gr couscous on a pot with boiling water (or broth)and let it be until ready (about 10 minutes).
When the couscus is done, you can start peeling and cutting into sticks the zucchini.
Warm up a pan with a bit of oir and fry the sticks for about 5 minutes (or until partially crispy).
And don't forget to cool your white wine before you start!
The trout is ready, place it all nicely on your plates, pour some wine, toast to your health and enjoy!
