Back in the day when I started Wanderwings, sometime in 2013, I found this awesome 3-ingredient sponge cake. It was easy, quick, and very customizble.
Well today I had the day off so I decided to revisit that cake, and experiment a bit. I wanted something chocolatey but not excessively sweet and this is what I came up with.
For this beautiful decadent bake I used:
- 200 gr self rising flour
- 4 large eggs
- 125 gr caster sugar
- lemon zest
- a few drops of lemon juice
- 1 block chocolate fondant
And still as simple as back then to prepare. Pre-heat the oven at 190ÂșC (mark 5 for gas), grease the cake form, and prepare a large dry bowl. In the bowl mix the flour and sugar, lemon zest, lemon juice and the eggs. Mix it all together with a mixer making sure there's no lumps left. Pour the mix in the cake form and bake for about 25 minutes (or until the needle comes out clean). When it is ready take it out of the mould and let it cool down.
While the cake cools off, start melting the chocolate, and with a tongue coat the cake. Let it rest till the chocolate solidifies and you're ready to go!
